Ingredients
3 eggs1 TBSP Cornstarch1TBSP Potato Starch3 TBSP Milk (I used skim)Dash of salt to your taste preferencesMix all together and whisk to remove any lumpsuse a non stick 6" pan or a regular pan with cooking spray.warm pan on medium settingput about .25 cup of the batter in pan and coat the bottom with itcook about 30 seconds and then flip to brown other sideFill with your favorite fillings, jams, fuits etcI like to roll them up and bake them with light cottage cheese, an egg white and a dash of pepper

    Try adding a TBSP of Tappioca Starch, this behaves like the gluten in normal flur and makes the pancakes bendy as opposed to them cracking. - 5/3/08
