Mock Mashed Potatoes

1 medium head cauliflower1 tbs cream cheese1/4 c grated parmesan1/2 tsp minced garlic1/8 tsp chicken broth (low sodium)Smart Balance
Cut cauliflower into small pieces and place in boiling water for 6 minutes.
Strain well and pat dry with paper towels.
Add cauliflower and all other ingredients to food processor and puree to desired consistency.
Serve with Smart Balance or butter.
