Quinoa Tabouleh

Ingredients
Quinoa 1 cup, dryTomatoes, 2 cup, chopped or slicedParsley, 1 cup, choppedJuice of half a lemonSalt & Pepper to tasteRed Onion, raw, .25 cup, chopped
Directions
Rinse quinoa well in cold water.
Add quinoa to 1.5 c fresh water. Bring to a boil, reduce heat, cover and cook 15 minutes. Leave cover on and let set 5 minutes.

Finely chop onion, parsley, and tomatoes. Mix in large bowl, set aside.

Juice half a lemon, add lemon zest if desired. Add olive oil, salt and pepper. Whisk to mix and pour over onion, parsley & tomato mixture.

Add cooked quinoa and chill before serving. Serve with hummus, pita and olives.

Makes 4 1.25-cup servings.

    Great Recipe. I added 1/4 cup each of red and green peppers, 1/4 cup celery and then served it in 1/2 a pita as a sandwich. It was awesome. Also added 1/2 can of black beans - 10/19/08

    I mixed the quinoa with winter wheat berries and used the veggies from Greek salad--makes a wonderful dish, and I served it over lo-fat cottage cheese, which makes it really rich tasting, higher protein, and a nice lunch - 7/25/08

    I really like this recipe. I never had Quinoa until this. I just squirt some lemon juice right on it and mix. I'm not sure why people are complaining about the cals in olive oil, there is hardly any and i just pout a little on and mix it in, maybe a tbs if that. Just enough to make it not all stick. - 4/7/13
