salted butter, 120 grwhite flour, 160 grsugar, 160 grfresh eggs, 4orange blossom water, 8 dropsa pinch of salttraditional shell-shaped mould
preheat oven to 180°C.
slowly melt butter and set aside to cool. divide eggs' whites and yolks. put salt in whites, and whisk until fluffy. combine yolks with sugar and mix well, add orange blossom water and melted butter and mix. gradually and gently whisk in flour and whites. divide mixture among "shells" and cook for about 10 mins.
Serving Size: makes about 30 madeleines
