Slow Cooker Lasagne

Ingredients
1 lb 93% lean ground turkey6- whole wheat lasagne noodles(like Hodson Mill)1 zucchini, 1 in dice1 eggplant, 1 in dice12 oz part skim ricotta cheese1 egg white (or 1/4 c egg beaters)1 jar spaghetti sauce(like Ragu)1.5 c reduced fat Italian blend cheese(like Sargento)1 tbsp fresh basil leaves chopped1 tsp each dried oregano and rosemary
Directions
1. cook ground turkey until no longer pink and drain all fat.
2. meanwhile chop veggies and set aside. Mix ricotta 1 cup of the Italian blend cheese with egg white and spices.
3. add 1/2 c. tomato sauce to the bottom of a 6 qt slow cooker(an oval one is best for this recipe). layer 2 noodles over tomato sauce, 1/3 cheese mixture, ground turkey, veggies and tomato sauce. repeat layers 2 more times. add remainder of tomato sauce over top and add remainder of Italian blend cheese.
4. cook for 3-4 hours on low. serve with a green salad.

    I don't like zucchini or eggplant, so I took those out and just went super simple - no egg either which also helped to drop the calories down to 251. Anyway, this was so yummy. Can't wait to eat the leftovers. - 9/29/20
