1.25 cup raw pinto beans Indian, Aromatic Basmati Rice, 1 cupCanned Coconut Milk, Lite 40gthymeoreganosprig of scallion
soak beans the night before in cold water
day of cooking, boil beans in a deep, covered pot for 1 hour -- slow cooking,
then add coconut milk, thyme and any other herbs you want
let that boil for another hour
then add the rice and some spices that you'd also like
cover and let that cook for 20-25 minutes on low heat
Serving Size: serves 6 dishes of roughly 100g (or 3.5 ounces) each
