Red Lentil Soup

Red Lentils, 1 cup Olive Oil, 2 tbspOnions, raw, 1 medium (2-1/2" dia) dicedRed or Yellow Bell Pepper dicedGround Cumin seed, .25 tspPepper, red or cayenne, .25 tspBrown Rice, medium grain, .25 cup99% Reduced Fat Chicken Broth, 3 cups + 1 cup waterSalt, 1/2 tsp Lemon Juice, 1 TBSP
Rinse Lentils and pick through to discard any debris.
Heat oil in a large pot over medium heat. Add the onion and bell pepper and saute for 5 minutes or until translucent. Stir in spices. Add 3 cups of chicken both and 1 cup of water (or use 4 cups of water), lentils and rice. Bring to a boil. Reduce heat to low, cover and cook for 20 minutes. Add salt and cook for another 30 minutes on low. Before serving, stir in lemon juice.
