Mini Vegetable Fritattas

Ingredients
Eggs (2 whole, 6 whites)OnionsRed PepperMushroomBroccoliGoat Cheese (or any cheese you like) Salt, Pepper, Herbs
Directions
1. Preheat oven to 375 degrees.
2. Using cooking spray, saute vegetables together until slightly tender, approximately 5 minutes.
3. In a large bowl, beat eggs until foamy and approximately doubled in size.
4. Spray a muffin tin with cooking spray.
5. Divide veggie mixture and cheese into eight muffin molds. Fill to 3/4 full. Pour egg mixture over spinach so that each cup is nearly full.
6. Bake for 30 minutes, or until eggs are set and slightly browned on the tops.
