2 small Boneless Skinless chicken breasts (Chopped)1/2 cup onion (Minced)1/2 Cup Green Pepper (Chopped)1 Clove Garlic (Minced)1 small can fire roasted diced green chiles1 tsp olive oil1- 8 oz. can Organic tomato sauce2- cans Swanson Chicken Broth1- Can Organic Refried Beans1 tsp taco seasoning1 tsp Cumin1/4- 1/2 tsp ground Cayenne PepperSalt and Pepper to taste
1. Put onion, green pepper and garlic in large sauce pan with olive oil. Cook until tender-crisp
2. Add diced chicken and green chiles. Cook until chicken is cooked thoroughly.
3. Add all remaining ingredients. Bring to a boil. Turn down heat and let simmer for 30 minutes.
4. You can garnish with Avocado and Sour cream if desired.
Serving Size: Makes 5 1.5 cup servings
