Turkey Taco Salad

Ingredients
-1 medium onion, diced. -2 cloves of garlic, minced- 1 tsp olive oil- 1 lb ground turkey- 1 can of black beans, rinsed and drained- 1 cup sweet corn- 3 T taco seasoning- 1/4 cup water- 2 T Dried Cilantro
Directions
In a nonstick skillet, heat oil and saute onions over medium heat till translucent (about 5 minutes). Add the garlic and saute for an addition 4-6 minutes.
Add the ground turkey to the skillet and cook through, breaking apart with a wooden spoon as you toss to cook. Once the turkey is no longer pink, add beans and corn. Turn to mix well and then add the taco seasoning plus 1/4 cup of water. Sitr to coat the turkey and veggies. Heat for an additional 3 minutes and sprinkle with cilantro.
Serve on top of fresh spinach with a dollop of sour cream.
