Eggplant Parmesan with Chicken Breast

Eggplant, fresh, 1 cup, cubes (remove)Onions, raw, .25 cup, chopped (remove)Chicken Breast, no skin, 3 ounces (remove)*Spaghetti/Marinara Sauce (tomato sauce), .25 cup (remove)Parmesan Cheese, grated, .25 cup (remove)*Extra Virgin Olive Oil, 1 tbsp (remove)Red Ripe Tomatoes, .25 cup, chopped or sliced (remove)Garlic powder, 1 tbsp (remove)Basil, 2 tbsp (remove)
Saute onions and chicken with a little salt and pepper in a Pam sprayed pan. Chop all veggies and toss in then place in oven safe container. Oval dish works best. Sprinkle with olive oil, mix in pasta sauce, cover with Parmesan then place in oven at 350 for 35 minutes.
