Portabella Mushroom caps with Tomatoes

4 Large Portabella Mushroom Caps2 cups fresh Spinach2 tbsp Coconut Oil2 ozs shredded mozzarella cheese1/2 pint grape tomatoes diced1/2 medium red onion diced1 tsp minced garlic1 tsp lime juice
1.Add coconut oil to frying pan, heat it medium high heat.
2. Break stems off portabella and put gill side down in pan.
3. Cook for 5 min
4. Flip mushrooms,.
5. Add spinach, put lid on pan. Cook for 5 min.
6. Mix diced tomatoes and onions in bowl with lime juice and garlic.
7. Put mushrooms and spinach on plate. Sprinkle shredded mozzerella cheese.
8. Top with Tomato and Onion mixture and serve.
Serving Size: 2 mushroom caps with 1 cup vegetable mix
