Southern Living Shrimp & Grits

10 oz cooked peeled, deveined medium shrimp1-1/2c water2 vegetable or chicken boullion cubes1/2c quick grits1/4c fat-free half and half4 Tbsp Smart Balance Light Spread, divided1c sliced portabello mushrooms1/3c sliced green onions1/2c part-skim shredded mozzarella cheese
Take tails off shrimp. ring water and boullion to a boil over medium-high heat; whisk in grits and half and half. Cook, whisking constantly, 7 minutes or till thickened. Remove from heat. Stir in 2 Tbsp Smart Balance spread and cheese. Keep warm.
Melt remaining 2 Tbsp spread in a large skillet over medium-high heat. Add mushrooms, green onions and thyme; saute 3-4 minutes. Add shrimp and cook 2-3 minutes or until shrimp are pink. Serve immediately over warm grits.
