Coconut Treats

Coconut Treats1/2 cup Xylitol plus 1/4 tsp. Stevia powder 2 Tbs. unsweetened cocoa (I used a little more)½ cup butter or extra virgin coconut oil (I used unsalted butter, but added a shake or two of salt)¼ cup cream + ¼ cup water1 tsp. vanilla½ cup natural creamy peanut butter (I used Smuckers Natural)3 cups unsweetened shredded coconut.
Mix sweetener, cocoa, butter or coconut oil and cream/water mixture in a saucepan. Bring to a boil, constantly stirring. Boil for one full minute EXACTLY.
Remove from heat and add vanilla and peanut butter. When peanut butter is melted and even throughout mixture, add the coconut and blend to coat evenly.
Drop by spoonfuls onto waxed paper.
Chill in fridge and enjoy!
