Arugula and Squash salad

Ingredients
2 cups arugula1 cup sliced Summer squash1cup Zucchini1/2 cup chopped tomato1 TB drained capers1/4 cup good Parmesan cheese1/4 cup lemon juice1/4 cup of good olive oil cracked pepper and salt to taste
Directions
Mix all the veggies, and mix dressing. Mix together and add cheese.
This is vegetarian, but you can add a can of good Tuna for a more filling meal..plus more protein.
