Turkey Soup With Rice

Ingredients
8 cups Turkey or Chicken Broth 3 T Olive oil1 cup chopped onion1 cup chopped celery2 tsp died thyme2 cups chopped carrots1 cup rice2 cups chopped leftover turkey1 cup corn3 T fresh parsleySalt and pepper
Directions
In a large pot, heat olive oil and cook onions until tender. Stir in celery and thyme. Stir in carrots and rice and toss to coat. Stir in turkey stock and bring to a simmer. Cook until vegetables and rice are tender. Stir in turkey, corn and parsley. Return to simmer and season to taste.
