Creamy cheesy mashed cauliflower

Ingredients
-1 medium head cauliflower-1/4 cup half and half-2 wedges laughing cow light creamy swiss cheese-1 clove garlic-salt, pepper, parsley to taste
Directions
-Chop cauliflower into florets. Steam in a steamer basket with peeled garlic clove until fork tender. Drain. Add half and half, laughing cow cheese, and spices to taste. Blend with immersion blender or put in food processor or blender and blend to desired consistency.
