Greek Potato Soup (like at Olive Garden)

Ingredients
1 T Olive Oil1 LB Spicy Italian Sausage (casting removed & crumbled)1 Onion, Chopped2 Cloves Garlic, minced1/4 t Crushed Red Pepper, plus more to taste2-1/2 C Water2 Cans 14.5 oz Chicken Broth3-5 Russet Potatoes, peeled & cubed or sliced into 1/4" 1 t Salt1/2 t Ground Pepper1 10 oz Box of Frozen Spinach Chopped1 C Whipping Cream
Directions
Place oil & sausage into dutch oven or large pot over mid-high heat.
Cook until sausage renders fat & begins to shrink, about 5 min.
Remove with slotted spoon to plate or bowl. Set aside.
Add onion; cook, stirring occasionally until transparent, about 5 min.
Add garlic & crushed red pepper. cook 1 min.
Add water & broth stirring to dissolve and bits on bottom of pan.
Add potatoes, salt & pepper. Heat to boiling.
Reduce heat & simmer for 10 min.
Add spinach & return sausage.
Simmer until potatoes are tender, about 15 min.
Stir in whipping cream & heat.
