*Zucchini, 3 cup, sliced (remove) * *Extra Virgin Olive Oil, 1 tbsp (remove) * Onions, raw, 1 medium (2-1/2" dia) (remove) * Green Peppers (bell peppers), 1.5 cup, chopped (remove) * Garlic, 2 cloves (remove) * Chili powder, 1 tsp (remove) * *Cumin seed, 1 tsp (remove) * Salt, .25 tsp (remove) * *Del Monte Petite Cut Diced Tomatoes, 4 cup (remove) * Beans, black, 2 cup (remove) * Beans, red kidney, 2 cup (remove)
1. Use plastic knife to cut zucchini into thin slices and set aside
2. Heat the oil in a large saucepan over medium heat. Add the onion; saute 5 minutes. Add the green pepper and saute 5 mins longer. Add the garlic; chili powder, cumin, and salt and saute 1 min longer.
3. Stir in the tomatoes with their juice, vegetable broth, the reserved zucchini, and the beans. Simmer for 30 minutes, stirring occasionally.
4. Ladle the soup into individual bowls.
5. Top each bowl of soup with grated cheddar, plain yogurt, and chopped cilantro, if you like.
Serving Size: Makes 6-8 Servings. Serving size is 1 cup
