Coconut Rice Pudding

Ingredients
Silk, Vanilla Soymilk, 1 cup, Coconut, sweetened, 1 cup *Brown Rice, medium grain, 2 cup *Agave | Madhava | Light, 1 tbsp *365 Organic Light Coconut Milk, 1.5 cup
Directions
Combine all ingredients in a pan, cook over low heat - simmering until most of the liquid is cooked out. Refrigerate. This makes a good dessert but I also like it for breakfast.
