Turkey Corn Chowder

4 cups Turkey stock with visible fat removed1 cup tap Water4 small potatoes, cut in 1/2 inch dice2 2/3 cups Yellow Sweet Corn, Frozen2 cups Mashed Potatoes3 cups cooked turkey breast meat3 cups cooked turkey dark meat1 1/2 cups Milk 1%1 T Corn Starch1 T Cajun Seasoning1 teaspoon salt
Add turkey stock, water and diced potatoes to large pot and bring to a boil. Reduce heat to medium, cooking three minutes. Add frozen corn and continue cooking for seven minutes. Test potatoes for doneness. If tender, add the mashed potatoes and stir until dissolved. Add turkey and cajun seasoning and cook until thoroughly heated, about 5 minutes. Mix corn starch to milk and slowly add to pot. Cook for about another 5 minutes. Taste and add salt if desired.
Makes about 18 one cup servings.
