veg & minced beef with rosemary oven roast potatoes

Ingredients
Minced Beef (800g)Onion (1 large)Peas (1 cup)Carrots (1 cup)Beef oxo cubeWhite Potatoes (900g)Extra virgin olive oil (4tbsp)2 or 3 Sprigs of RosemarySalt, Black pepperOptional - beef gravy granules.
Directions
Potatoes:
Heat oven to 200 c.
Wash, cut and place potatoes into a roasting dish.
Drizzle with olive oil.
Place sprigs of Rosemary over the top.
Season with salt and black pepper.
Either cover with foil or leave open, depending on preference and place in the top half of the oven.
Cook for 20 to 25 minutes. (take out half way through and turn for an even colour). I prefer to cover the potatoes for the first 10mins and then leave uncovered so they brown nicely.

Beef & Veg
Warm the Wok
Put 1 tbs of olive oil in the wok
Add sliced onion cook until it is softened.
Add minced beef and cook until brown
Add beef oxo
Add veg and stir.
Cover and simmer for 20 minutes
Drain excess juices
(optional thicken with gravy mix) and serve.
