Fresh Apple Cranberry Bran Mini-Muffins

3/4 cup wheat bran3/4 cup nonfat milk1 cup whole wheat flour1/2 cup unbleached all-purpose flour2 tsp cinnamon3/4 tsp salt1.5 tsp baking powder1/4 tsp nutmeg3/4 cup light brown sugar, unpacked1/4 cup vegetable oil1 egg1 medium to large apple, peeled and chopped (I like Pink Ladies or Fuji, but it's up to you! chop them small enough for mini-muffins)1/4 cup chopped fresh or frozen cranberries (if using frozen, thaw first please)
1. Combine the bran and milk, let sit for 5 minutes.
2. In a medium bowl, combine flour, baking powder, cinnamon, salt, baking soda, and nutmeg.
3. Stir the brown sugar, oil and egg into the bran mix. Stir the dry ingredients in until combined.
4. Stir in cranberries and apples.
5. Spoon into sprayed muffin tins, and top with just a few oats each.
6. Bake @ 400 degrees for about 10 minutes.
