Tomato & Cucumber Salad

3 large tomatoes (vine ripe, roma, hothouse or heirloom) 1/2 large cucumber, peeled1/4 cup red onion, chopped to preferred size1/3 cup olive oil, more depending on preference4 tablespoons balsamic or seasoned rice vinegar1/4 cup feta cheese, crumbled1/4 teaspoon dried oregano2 dashes salt2 dashes pepper
Chop tomato, cucumber and onion according to preference. Add olive oil and vinegar and mix all ingredients together. Lastly, add crumbled feta, dried oregano, salt and pepper and mix once more. Enjoy.
Serving Size: Makes 4 - 3/4 cup servings.
