Low Carb Zucchini Bread

Ingredients
1/4 cup plus 2 T Flax meal1/4 cup coconut flour1/4 cup vanilla flavored whey protein powder1/4 cup unsweetened shredded coconut1/4 cup walnut pieces1 T cinnamon2 tsp baking powder1/2 cup Tempt Hemp Milk (unsweetened)3 eggs1 tsp vanilla extractStevia sweetener (I might skip this next time - it had that funky sweetener taste. Maybe Splenda or Erythritol instead?)1/5 - 2 cups shredded zucchini
Directions
Heat oven to 350
Spray a loaf pan with no stick oil
Mix dry ingredients together in mixing bowl
In separate bowl, combine wet ingredients except zucchini
Add wet to dry and blend well
When blended, add in the zucchini
Pour into loaf pan
Bake about 40 min, until toothpick comes out clean.

Serving suggestion - smear with greek yogurt flavored with sweetener and cinnamon or maple extract as "frosting"

Serving Size: Makes 1 loaf, cut into 6 1 inch slices
