Barley Meatloaf

Ingredients
1 lb extra lean ground turkey1 c. cooked pearl barley1/4 c. egg substitute1/2 c. chopped onion1/2 c. chopped carrots1/2 c. chopped celery1 Tbsp low sodium soy sauce1 tsp sea saltFresh ground pepper1 tsp dried oregano1 tsp. dried basil
Directions
1. Preheat oven to 350 F
2. In a large mixing bowl combine all ingredients with a pair of clean hands. Place in a loaf pan that has been prepared with a light coating of cooking spray. Bake for about an hour. Remove from oven and let stand for 10 minutes before cutting.
