For pesto:1 garlic clove1/3 cup walnuts2 cups basil leaves, loosly packed1/2 tsp salt3 tablespoons olive oil2 tablespoons water1 tsp balsamic vinegarfor scramble:2 tablespoons olive oil1 small onion, sliced thin1 cup grape tomatoes2 garlic gloves, minced1 pound, firm tofu crumbledfresh ground pepper
Preheat pan over medium-high heat. Add oil to pan, saute onions for 3 minutes or until soft. Add tomatoes and cook for 5 minutes, stirring occasionally until tomato skins start to crack, add garlic saute another 30 seconds.
