Carrot Cookies

3/4 c. sugar1 cup shortening1 egg1 t. vanilla extract1 c. mashed cooked carrots1/2 t. lemon extract2 c. flour2 t. baking powder1/2 t. salt
Cream shortening, sugar and egg. Add extracts and carrots. To the creamed mixture add the flour, baking powder and salt. Mix well.
Drop by teaspoon onto cookie sheet. Baker at 350º for about 10-12 minutes or until bottoms are lightly browned.
Ice cookies with powdered sugar, orange extract or lemon extract, and margarine. Make like a glaze and ice while cookies are still warm.
