German Pizza

Ingredients
6 - 8 medium size potatoes, peeled and sliced1 sweet onion, peeled and sliced1/2 tsp. salt or to taste (optional)1/4 tsp. pepper or to taste (optional)1 lb. ground chuck1 small can mushrooms (or fresh equivalent)1 tsp. salt or to taste (optional)1/4 tsp. garlic powder or to taste (optional)4 - 6 beaten eggs (add salt to taste)1 cup shredded cheese (I prefer mild cheddar)
Directions
Fry potatoes and onion in skillet with olive oil adding salt & pepper to taste until tender (I added 1/2 tsp. salt, and a few shakes of pepper).

Meanwhile, in another skillet, brown ground chuck and mushrooms adding salt, pepper, & garlic powder to taste (I added 1 tsp. salt & approx. 1/4 tsp. garlic powder). Drain.

Put cooked ground chuck/mushroom mixture on top of potatoes. Add the beaten eggs then top with the shredded cheese. Cover skillet and simmer until the eggs are cooked and the cheese melted, 5 - 10 mins. Serve immediately.
