An English Girl's Basic Scone Recipe

8oz (1 Cup USA) SR FlourPinch Salt1 tsp. Baking powder2oz (1/4 Cup USA) Butter¼ Pint (1/4 Cup USA) Milk ( maybe a little more/or less)1oz (1/8 Cup USA) Sugar
Sift Flour, baking powder and salt in a bowl. Rub in the butter until mixture resembles fine breadcrumbs, and then stir in the sugar. Mix in enough milk to make soft dough. Turn on to a floured surface and knead very lightly.
Roll out the dough to about ½ inch think and cut out 8 rounds using a 2 ½ inch cutter. Re-rolling the dough as necessary. Place on a greased baking tray and brush with milk. Bake in a hot oven 10-12 minutes or until well risen and golden brown. Cool on a wire rack. Serve with butter or whipped cream and Jam.
