Ingredients
2 1/4 tsp yeast3 cups flour2 cups hot water (as hot as your tap can make it)1/4 cup sugar2 tsp salt16 oz Hatch Green Chile (roasted and peeled)2 cups Cheddar Cheese grated
Directions
Add the water and yeast to the pan and let it sit for about 15 minutes.
While this is happening, rise and peal your green chili. Leave seeds in for more heat. Chop chili.

Once the 15 minutes is up add the Flour, Sugar, Salt, Green Chile and some cheese. Mix well. When the dough is done, turn onto a floured surface and separate into as many rolls as you want.

Grease a baking pan and put the dough balls on it, let them rise in a warm spot for about 20 minutes. Turn dough balls over (so greased side is up) and sprinkle cheese on top. Bake for 15 minutes on 375.

Serving Size: Makes 12 rolls or more if you wish.
