Stuffed Yellow Peppers

Ingredients

4 Large Yellow Bell Peppers1 lb. extra-lean ground turkey1 package frozen spinach (10 oz.)1 can diced tomatoes (14.5 oz.)8 tsps grated parmesan
Cut peppers in half and clean them. Cook peppers in boiling water for approximately 5-8 minutes. Remove peppers from water and set aside.
Brown turkey in a large pan over medium heat. Season to taste with salt, pepper, or other no-calorie seasoning. Once cooked, place turkey in large mixing bowl.
Prepare spinach according to directions on package. Add cooked spinach to bowl with turkey. Pour can of diced tomatoes over spinach and turkey, and mix together.
Pre-heat oven to 375.
Spray baking sheet with non-stick spray. Spread peppers out on baking sheet. Fill peppers with turkey/spinach/tomato mixture. Top each pepper with a teaspoon of grated parmesan.
Bake in oven ten minutes.
Remove from oven and serve.
Serving Size: Makes 4 servings (2 pepper halves per serving)
