zucchini patty

Ingredients
4 cups shredded zucchini2 cups bread crumbs1/2 cup parmesan cheese, grated4 eggssalt and pepper to taste1/4 tsp. cayenne pepper
Directions
Shred the zucchini and put 1 tbsp salt in and put in colander and drain. In bowl add drained zucchini, bread crumbs, parmasan cheese and eggs. Season to taste with pepper, cayenne pepper, italian seasoning, whatever you like. then form into patties and fry in non-stick skillet coated with non-stick cooking spray. Cook 3-4 mins. per side, you want a crispy side as it helps them hold together. These taste great as leftovers.
