Zucchini Marinara

4 large Zucchini1 medium onion4 green olives2 cans of Tomatoes (14.5oz)4 tbsp Olive Oil2 tbsp Basil2 cloves Garlic1 tbsp Splenda
Heat olive oil over medium high heat
Slice zucchini into quarter in strips.
Slice zucchini quarters in half.
Chop onion.
Chop olives into small pieces
Saute onion and zucchini for 3 - 5 minutes in a large skillet (until zucchini just starts to soften).
Add tomatoes, garlic, basil, olives and Splenda.
Reduce heat to medium.
Cover and simmer for 20 minutes, stir occasionally.
Variations:
Grill Zucchini for 5 minutes instead of adding them to saute.
