Zucchini Muffins

Ingredients
3 eggs2 cups graulated sugar1 cup vegetable oil2 cups grated unpeeled zucchini3 1/2 cups flour2 tsp baking soda1 tsp baking powder1 1/2 tsp salt1 Tbsp cinnamon2 tsp vanilla
Directions
Beat eggs sugar and oil together well
Sift flour, baking soda, baking powder, salt and cinnamon together
Add zucchini to egg mixture to combine
Add flour mixture to egg mixture to combine
Add raisins and mix
Place in muffins tins sprayed with cooking spray
Bake in 350F oven for 45 minutes or until toothpick inserted in center comes out clean
