Bran Flax Muffins

Ingredients
1 1/2 cup unbleached White Flour2 tsp cinnamon3/4 cup flaxseed meal1 1/2 cup finely shredded carrots3/4 cup oatbran2 apples, peeled and shredded1 cup brown sugar1/2 cup raisins2 tsp baking soda1 cup chopped nuts1 tsp baking powder3/4 cup milk1/2 tsp salt2 eggs, beaten1 tsp vanilla
Directions
Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins and nuts. Combine milk, beaten aggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. DO NOT OVER MIX. Fill muffin cups 3/4 full. Bake at 350 for 15 - 20 minutes. Makes 16 muffins
