Cranberry Chocolate Pancake

Old Fashioned Oats (1/2 cup)Baking powder (1/4 t.)Salt (1/4 t.)Splenda Brown Sugar Blend (1/2 t.)Cinnamon, dashEgg substitute (1/2 cup)Ghirardelli 60% Cacao Bittersweet chips (1 T.)Craisins dried cranberries (2 T.)
Mix dry ingredients, then add egg substitute. I add my cranberries and chocolate last. I let the mixture sit for a few minutes while my small omlette pan warms up (medium heat). I pour the mixture in, spread it into a pancake shape, then let cook for 7 minutes on the first side. After my timer goes off, I flip the pancake and let it cook for 3 minutes. Cool on a paper towel, then eat with your hands. Makes 1 serving.
