Sausage Stuffed Acorn Squash

3 Acorn squash, cut in half and seeds removed1 1/2 cups cooked brown rice1 cup cooked ground sausage (I use Whole Foods fresh breakfast sausage)1 cup cooked cut broccolicooking spray
1. Preheat oven to 375*.
2. Lightly coat a large baking sheet with cooking spray. Cut squash in half horizontally. Scoop out and discard seeds. Place the squash cut-side down on the prepared baking sheet. Bake until tender, about 45 minutes.
3. Mix together brown rice, ground sausage and broccoli and then fill the squash halves with the stuffing mix.
4. Reduce heat to 325* and bake squash halves with stuffing mix for about another 8-10 minutes.
Serving Size: Fills 6 acorn squash halves and enough for leftovers
