Cheese Grits Florentine

Ingredients
1 pat butter1-2 cloves garlic1 cup water1/4 cup Quaker Grits Quick 5 minutes1/8 salt, or to taste2 to 3 handful fresh spinach1 ounce cheddar cheese, grated1 sun dried tomato, cut into small pieces, optional
Directions
Melt butter in small saucepan, and saute crushed garlic for a short time, maybe 1 minute. Add 1 cup water, and bring to a boil. Add grits and salt, and stir, and add fresh spinach and stir into mixture. Cook on low for 5 minutes until grits are cooked, and add cheese, stir until melted. Add sun dried tomato and enjoy.
