Ham and Potato Soup

5 small potatoes1/2 cup chopped white onion1/4 cup celery chopped3/4 cup to 1 cup turkey ham3 cups water5 T wheat flour5T Smart balance butter2 cups non fat milk
peel and chop your potatoes and put into crock pot. add chopped onion,celery, and ham all chopped to desired consistency. Pour water over top and you can add salt and pepper if you like.
In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
Add thickening to your crock pot items and cover. Cook on low for 4-6 hours...test the potatoes to determine done-ness. You can also cook it on high for a shorter amount of time.
