Death by Chocolate Vegan Cake

Ingredients
4 1/2 cups all purpose flour3 cups sugar1 cup cocoa powder1 TBSP baking soda2 tsp salt1 1/2 cups vegetable oil2 TBSP pure vanilla Extract3 cups strong brewed coffee1/4 cup cider vinegarIcing:1 (12 oz) pkg firm SILKEN tofu3 cups semisweet chocolate chips (vegan if desired)
Directions
Preheat oven to 350. Grease 3 nine-inch round cake pans; dust with cocoa and line bottom with parchment paper.
Sift together dry ingredients in a large bowl. Add oil and vanilla. Mixer on low, blend well. On medium, blend in coffee. When smooth, add vinegar and blend on low.

Divide into prepared pans. Bake 20-25 min. until toothipick inserted in center is clean. Remove from oven and cool 15 -20 min on wire rack still in PAN. Remove from pans and cool completely before icing.

Icing: Drain water from tofu. Crush tofu and put in med. saucepan with choc chips. Stir over med, heat until chocolate is very soft. Transfer to food processor and puree until fully blended. Cool to spreadable consistency & ice cake incl. between layers.
