Turkey Lasgna

1 lb. turkey italian sausage (hot)1 large onion chopped2 - 4 small cloves garlic 1 jar Ragu spaghetti sauce1/4 cup ketchup4 Tblsp red cooking wine1 tablespoon Italian seasoning1-24 oz container cottage cheese 1 8 oz package grated mozzerella cheese1/3 cup grated parmesan cheese1-10 oz package frozed chopped spinach2 large egg whitesgarlic powder 1/2 teaspoonItalian seasoning 1 teaspoon 8 oz container fresh button mushrooms, cleaned and slicedUncooked lasagne noodles, 9 or 10
Preheat large skillet.
Remove skin from 1 lb. hot turkey Italian sausage and place in hot skillet, breaking up as it cooks for about five minutes.
Add chopped onions and continue to cook, lowering heat to medium low for another five minutes
Add garlic cloves using garlic press or chop vey fine.
After about a minute or two add spaghetti sauce, red cooking wine and ketchup. Bring to simmer add Italian seasoning and let simmer while preparing cheese filling.
Filling:
Cook spinache in microwave until tender. Let cool for five minutes.
Preheat oven to 350 degrees.
Put cottage cheese, mozzerella, parmesan and egg in large bowl. Add Italian seasoning and garlic powder and stir together.
Add chopped spinach and stir until well mixed.
In nonstick sprayed 13 X 9 pan spoon in about 1 cup of sauce. Add 3 to 4 uncooked lasgna noodles, leaving space between to allow for expansion. spoon in 1/3 of cheese filling and spread over noodles. Lay another layer of noodles and spoon on more sauce. Dollop another third of cheese mix and carefully spread. Sprinkle in sliced mushrooms and lay another layer of noodles. Spread last third of cheese mixture and spoon on remaining spaghetti sauce.
Cover pan with foil and place in oven. Check noodles for tenderness after one hour and cook longer if necessary.
Serve with salad.
