Tomatoey Mac - Un - Cheese

2 onions, diced2 to 3 lbs. tomatoes, chopped1 lb. whole wheat macaroni3 ½ cups cooked, drained cannellini beans1 cup nutritional yeast½ cup lemon juice1 tbsp chili powder1 tsp garlic powder
Preheat oven to 350 degrees F.
Place onions in a large, microwave-safe covered baking dish.
Cover and cook 5 minutes on High.
Add tomatoes to onions.
Cover the baking dish and cook 3 minutes.
Cook pasta until very al dente.
Add the beans, nutritional yeast, lemon juice, chili powder and garlic to a blender.
Cover and run the blender at high speed until the ingredients are creamy. Combine the cooked and drained pasta and the bean sauce with the onions and tomatoes in the covered dish, and mix well.
Cover and bake for about 10-15 minutes.
