Sandi's Downhome Pimento Cheese

Ingredients
1 Can of Pimentos, 2 Oz.2 Tablespoons of Mayonaise (I prefer Dukes)8 oz of Medium Cheddar Cheese
Directions
Shred Cheese
Pour in Pimento w/ juice
Mix these together with a spoon
Add 2 Tbl of Mayonaise
Mix all together and sit in the fridge for at least one hour to allow the pimento flavor to be absorbed within all the ingredients for the best taste. You can eat right away as well, but has more of a mayonaise flavor without cooling for a bit.
