The Best Beets

Ingredients
4 med. beets, scrubbed, leave an inch of root on1/2 c. chopped toasted pecans1 Tbsp. white wine vinegar2 tsp. lemon juice1 med. shallot1 1/2 Tbsp. fresh dill6 Tbsp. Extra Virgin Olive Oil.
Directions
Move oven rack to middle position and heat to 400F. Make a foil bowl and tightly wrap beets. Place on cookie sheet and bake for 45- 60 mins. Let cool. Put on gloves and peel off skin. Slice beets and place in dish. Add the rest of the ingredients and mix well. Eat warm or cold.
