Buckwheat Crepes, GF

Ingredients
2 beaten eggs1.5 cups milk (2%, but skim would work too)1 cup buckwheat flour1 tablespoon cooking oil (canola)
Directions
Mix ingredients well. Heat a lightly greased 6-inch skillet, add ~2 tbsp batter. Lift and tilt skillet to spread batter around the pan. Brown one side only. Invert over plate and store/stack with wax paper/parchement in between. Repeat for each crepe, adding oil to the skillet as needed.
