Crock Pot White Chicken Chili

Ingredients
2 lbs of Boneless, Skinless, Chicken Breast2- (15 oz) cans of White Corn (drained)2 (15 oz) cans of Cannellini Beans (rinsed and drained)1 (7oz) can of diced Green Chilies2 (10.75 oz) cans of 98% Reduced Fat Cream of Chicken Soup1 (10.75 oz) can of Chicken broth1 tsp of cumin2 tsp of oregano1 tsp of chili powder1 tsp of white pepper1 whole bay leaf1 cup of reduced fat sour cream
Directions
Place whole chicken breasts in the bottom of a large crock pot.

Pour beans and corn over chicken.

In a separate bowl, mix broth, soup, chilies and spices. Add mixture to crock pot.

Makes 14 - 1 cup servings

Cook on high 4-6 hours or low 8-12 hours

Prior to serving, remove chicken from crock pot and fork shread or cut into bite sized pieces.

Add sour cream to crock pot mixture and stir until smooth.

Add chicken back to crock pot and serve.
