Carly's flavorful Quinoa and Bison Beef Dish

Ingredients
Directions
1 pound of bison beef.5 chopped sweet onion1 medium zucchini1 cup of Quinoa Seasonings to include salt, black pepper, cilantro, onion powder, garlic powder (or any others you would like to add)
Cook 1 cup of Quinoa in 2 cups of water
In a separate non stick pan, heat 1 tsp of olive oil, add onion, and zucchini, stir fry until starts to brown. Remove from Pan. Add Bison, brown for about 15-20 minutes (I rinsed it a couple of times after it was cooked to remove excess fat)
Continue cooking until water cooks out. Add zucchini and onion
In a large bowl mix the quinoa and the bison mixture together. Stir well.
Makes about 6-1 cup servings!
Serving Size: Makes six one cup servings
