Nard's Brunswick Stew

1 tbsp olive oil1 cup onion, chopped2 stalks celery, chopped3 cloves garlic, minced2 lbs ground pork2 lbs ground beef1 whole roasted chicken, meat shredded3 (14.5 oz) cans stewed tomatoes w/ liquid1 cup ketchup1/2 cup hickory BBQ sauce1 tbsp Worcestershire sauce1 tbsp soy sauce1 tbsp hot pepper sauce1 tsp cayenne pepper2 (14.5 oz) cans beef broth3 (14.5 oz) cans chicken broth1 medium green bell pepper, chopped2 (14.5 oz) cans cream corn1 (14.5 oz) can whole kernel corn3 cups dry instant potato flakes
1. Heat olive oil in a LARGE dutch oven, saute onion, celery, and garlic until soft. Mix in pork and beef and brown evenly. Do not drain.
2. Over low heat, add shredded chicken, tomatoes (with liquid), ketchup, bbq sauce, broths, worcestershire sauce, soy sauce, cayenne pepper, hot sauce, and chopped bell pepper. ALso, seasonw ith salt and pepper. Cook, stirring occasionally for 2 hours.
3. Stir in cream & whole kernel corn, continue cooking for 1 hour.
4. Stir in potato flakes and stir until thickened.
