Ingredients

1 ¾ c. sugar½ c. butter½ c. unsweetened applesauce2 c. mashed zucchini2 egg whites1 tsp. vanilla½ c. sour milk or (reg. milk with 1 tbsp lemon juice)2 ½ c. unbleached flour1 tsp salt½ tsp. cinnamon1 tsp. baking soda
Cream butter and sugar. Add applesauce and mix. Add zucchini, mix, add eggs. Add vanilla to sour milk.
Alternate milk and dry ingredients. Mix well. Pour into greased and floured 13 x 9 pan or 2 bread loaf pans.
Bake 350 / 50 minutes or until done.
Serving Size: Makes 2 Bread Loaves - 24 half inch pieces
